Amylodextrin
Definition
A soluble polysaccharide with an intermediate molecular weight, obtained as a partial degradation product during the first stage of enzymatic or acid hydrolysis of starch. Also called soluble starch, amylodextrin produces an intense blue or violet coloration in reaction with iodine and represents a major structural transient compound in industrial saccharification and glucose production processes.
